In a sauté pan, over medium-high heat, heat up a couple teaspoons of olive oil. Add in bell peppers, onion and broccoli. Cook until tender crisp with slight browning. Season with salt and pepper. Set aside. Lay out a tortilla, on one half layer ¼ of the shredded cheese, ¼ of the black beans and ¼ of the cooked veggies. Fold the other half of the tortilla over to make a semi-circle shaped quesadilla. Repeat with remaining tortillas. In a large, dry sauté pan, toast both sides over medium-low heat until brown and crispy.
Plant-based: Swap out shredded cheese for vegan refried beans, hummus or pumpkin puree.
Gluten-free: Use a gluten-free tortilla.
Kid-friendly: Select the vegetables they will enjoy or make a cheese quesadilla with veggies and dip on the side.
