Heat up a grill to 375 F or turn on your broiler. Season your chicken with salt and pepper and rub with a little bit of olive oil. Grill or broil on both sides for 2-3 minutes or until a golden crust forms and the chicken is cooked through. Spread pesto on the bottom of the bun, add greens, tomato and mozzarella cheese.
Plant-based: Use pressed, firm, thinly sliced tofu instead of chicken. Look for vegan pesto. Swap out fresh mozzarella for a sliced vegan cheese or leave it out.
Gluten-free: Use gluten-free buns or ciabatta
Kid-friendly: If pesto isn’t their thing, use their favorite sauce.
