Preheat the oven to 425 F. Put potatoes on a microwave safe dish, pierce with a fork and microwave for 4 minutes. Carefully cut potatoes into wedges. On a lined baking sheet, toss potato wedges with a little olive oil, salt and pepper. Bake for 20-25 minutes or until potatoes are tender and golden.
Remove fries from the oven and pour the marinara sauce on top. Just enough to flavor the fries, you don’t want them soupy. Sprinkle over mozzarella cheese and top with pepperoni. Return the fries to the oven and cook for 5 minutes or until the cheese is melted and pepperoni is crisp.
Serve fries with mixed veggies on the side.
Plant-based: Skip the pepperoni and use vegan cheese shreds instead of mozzarella.
Add spice: Sprinkle red pepper flakes on top.
