Place sweet potatoes on a microwave safe plate. Microwave on high for 6 minutes, flipping halfway through. If they aren’t fork tender, continue to cook in 30 seconds intervals until they are. Set aside.
While sweet potatoes cook, warm through shredded chicken with the barbecue sauce. Set aside.
Slice each sweet potato lengthwise about ¾ of the way through, opening it like a book. Divide the bbq chicken among them potatoes and top each with red onion, shredded mozzarella cheese and cilantro. Serve with romaine hearts tossed with just enough ranch to coat.
Plant-based: Use canned chickpeas that have been drained and rinsed instead of chicken. Use vegan cheese shreds. Use vegan ranch.
Gluten-free: Check BBQ sauce for gluten-containing ingredients.
Kid-friendly: Serve barbecue chicken and sweet potato separate. Let them dip their favorite veggies in the ranch dressing.
