Preheat the oven according to directions on oven fries. Cook according to the package.
While the fries cook, in a bowl, mix together tuna, celery, green onion, dill, parsley, greek yogurt, salt and pepper. Set in the fridge.
When fries are finished, pull from the oven. Lay out a whole wheat tortilla, place ¼ of the tuna mix down along the centerline leaving about 2 inches of space on one side. Top with some spring mix. Fold in the empty side and roll up like a burrito. Repeat with the remaining tortillas. Serve with oven fries.
Plant-based: Use smashed chickpeas instead of tuna. Use tahini instead of yogurt.
Gluten-free: Use a gluten-free tortilla.
Leftover idea: Scoop tuna into a lunch container and serve with celery sticks and crackers for a light, yet hearty lunch.
