In a saute pan, over medium-high heat, add in a little olive oil followed by the sausage. Cook, moving frequently until golden brown, about 4-5 minutes. Drain off excess fat and set aside.
In a large bowl, toss together pears, greens, dried cranberries and just enough balsamic vinaigrette to coat. Divide among serving dishes and top each salad with blue cheese crumbles, sausage and croutons.
Plant-based: Use vegan sausage or swap for drained and rinsed canned chickpeas. Use nutritional yeast or vegan cheese shreds instead of blue cheese.
Gluten-free: Use gluten-free croutons.
Kid-friendly: Make theirs a wrap and serve with their favorite fruit and baked chips.
