Preheat the oven to 375 F. Place chicken breasts in a baking dish and rub with olive oil, salt and pepper. Top each chicken breast with a thin layer of pesto, followed by the sliced tomatoes topped with fresh mozzarella. Bake in the oven for 20 minutes or until the internal temperature reaches 165 F.
During the last 10 minutes of cooking, microwave the brown rice and green beans. Serve chicken breasts with sides.
Plant-based: Use pressed and drained, firm tofu slices instead of chicken. Use vegan cheese shreds instead of mozzarella. Use vegan pesto or homemade.
Add spice: Shake on some red pepper flakes while seasoning with salt and pepper.
Kid-friendly: Leave off the pesto and use marinara sauce instead.
