Mix together rotisserie chicken, buffalo sauce and greek yogurt. Set aside. Lay out a whole wheat tortilla. add a small layer of the buffalo chicken mixture, arugula and scallions, followed by yogurt ranch and cheese. Wrap up tortilla by tucking in the two sides and rolling from back to front until tightly sealed. Place in a dry saute pan over medium-heat and heat both sides until golden and toasty. Serve with a side of the yogurt ranch.
Plant-based: Use canned jackfruit or mashed chickpeas instead of chicken, and vegan cheese shreds. Also substitute yogurt and ranch for a plant-based option.
Gluten-free: Use gluten-free tortillas.
Kid-friendly: Leave out the arugula and watch the heat on the buffalo sauce. You could also put the buffalo sauce on the side.
