In a small bowl, mix together tahini, lemon juice, garlic and salt and pepper. This mixture will be very thick, add in a little water at a time and stir completely until it turns lighter in color and becomes a drizzle consistency.
Stuff your pita with falafel, mixed greens, cucumbers, tomatoes and pickle chips and drizzle tahini over it all.
Gluten-free: Use gluten-free tortilla or make it a falafel salad.
Add spicy: Add pickled jalapenos or radish to your pita.
Kid-friendly: Serve the falafel with ketchup or make a pita cheese crisp and serve with a side of tomatoes, cucumbers, and dipping condiment.
