In a small bowl, mix together tahini, reserved orange juice, salt, pepper and a little water to create a salad dressing consistency. Set aside.
In a large bowl toss together spring mix, sliced strawberries, oranges, dried cranberries and pumpkin seeds with just enough dressing to coat. Divide salad among 4 serving plates. Top with goat cheese and shrimp.
Plant-based: Leave out the goat cheese. Swap out shrimp for chickpeas.
Kid-friendly: Swap out shrimp for rotisserie or grilled chicken and stuff salad in a pita pocket or tortilla.
Quick prep: Use a store-bought salad kit.
