Preheat the oven to 425 F. On a rimmed sheet pan toss together the cauliflower florets, buffalo sauce, salt and pepper. Roast for 15 minutes. Set aside.
In the bottom of a large bowl, mix together tahini, buffalo sauce, salt, pepper, and garlic. This will be pretty thick, slowly add water to the tahini mixture, combining completely before adding more until it turns lighter in color and comes out to a thick vinaigrette consistency. Toss in the cauliflower, celery, carrot, chickpeas and scallions and serve. Chill if desired or eat at room temperature.
Plant-based: Omit the chicken.
Quick prep: Buy already grated carrots.
Kid-friendly: Roast chickpeas at 350 degrees for 10 minutes, then pair with celery and their favorite fruit, cheeses, or nuts to make a snack plate.
