My philosophy is simple: I believe what we consume is everything—from the foods we put in our body, to the ideas we feed for our minds, to the connections we have with others. Everything gives you energy, and what you take in determines how your life will be. My goal is to champion a healthy lifestyle that is simple, accessible, and gives your body what it needs to fuel your best life possible.

Preheat the oven to 425. In a small bowl mix together some olive oil, dried thyme, dried oregano, salt and pepper. Don’t be shy with the seasonings. On half of a large sheet pan, toss together red onion, cherry tomatoes and zucchini with a little of the olive oil seasoning mixture. On the other half, drizzle and rub some of the olive oil seasoning on the chicken and lie flat on the sheet pan. Place in the oven and bake for 20 minutes. Remove from the oven and sprinkle on feta cheese. Return to the oven and bake for an additional 5 minutes or until the chicken reaches an internal temperature of 165 F. Serve chicken alongside veggies and brown rice.
Plant-based: Use pressed and drained firm tofu instead of chicken. Omit cheese.
Add spice: Add red pepper flakes to olive oil seasoning mixture.
Kid-friendly: Use their favorite veggies or make them into kabobs for a fun twist.
Quick-prep: Use microwave brown rice.
