In a large sauté pan over medium high heat, add a drizzle of olive oil. Add in ground turkey and chili powder. Season with salt and pepper. Continue cooking over medium-high heat until turkey is cooked through and browned. Add in black beans, cook until heated through. In a bowl, layer brown rice, ground turkey, salsa, mozzarella cheese and avocado.
Plant-based: Use a variety of beans such as pinto, kidney and black instead of ground turkey. Use vegan cheese shreds instead of mozzarella.
Add spice: Add a tiny bit of chipotle in adobo with the turkey.
Kid-friendly: Choose brown rice, add less chili powder, and wrap ingredients into a tortilla.
