In a large bowl, mix together ground turkey, salt, pepper, sun dried tomatoes, basil and feta cheese. Divide into fourths and make into 4 burger patties.
Heat a large frying pan over medium heat. Add a little bit of olive oil and then the burgers. Cook the burgers for 5 minutes on each side or until an internal temperature reaches 165 F. Set aside and let rest for 5 min. Cut each burger in half.
Lay out a whole wheat tortilla, place two burger halves down in the center, followed by baby spinach, English cucumbers and a drizzle of the lemon dressing. Wrap and roll like a burrito and repeat with remaining tortillas. Serve with steamed veggies.
Plant-based: Use a veggie burger and use add-ins as toppings instead. Omit feta cheese or use vegan feta.
Gluten-free: Use a gluten-free tortilla.
Kid-friendly: Make them a plain turkey burger and top with their favorite toppings.
