Ingredients:

  • 8 small whole wheat tortillas
  • 1 lb deli turkey, sliced thin
  • 1 cup shredded mozzarella cheese
  • 1 cup store bought pesto
  • 2 vine ripe tomatoes, sliced in half moons
  • 2 large avocados, sliced ¼” thick
  • Cucumbers, sliced ¼” thick for serving
  • Sprouts or spring mix, for serving
  • 1 steamer bag veggies, cooked to package directions

Directions;

Lay out whole wheat tortillas. Layer on 2 oz of turkey per tortilla, followed by 2 tbsp shredded mozzarella cheese, 2 tbsp store bought pesto, a couple slices of tomato, cucumber and avocado and finally the sprouts or spring mix. Roll the tortilla up or eat like a taco. Serve with steamed veggies.
