Preheat the oven to 375 F. While the oven preheats, in a large saute pan over medium high heat, add in a little bit of olive oil. Add in the ground turkey, taco seasoning, salt and pepper. Cook until the turkey is well browned and cooked through, about 5-6 minutes. Drain off any fat.
Place zucchini on a sheet tray and fill each half with ⅛ of the turkey taco mix. Place in the oven and bake for about 15 minutes or until zucchini is tender.
Remove from the oven and top with shredded cheddar cheese, avocado and a dollop of plain Greek yogurt.
Plant-based: Use black beans or vegan crumbles instead of turkey. Use vegan cheese shreds and vegan sour cream.
More topping ideas: Pickled jalapenos, cilantro, chopped onion, shredded lettuce, salsa, crushed tortilla chips
Kid-friendly: Load theirs up in a taco shell or tortilla chips if they aren’t a fan of zucchini.
